Whereas our Campos project is the equivalent of a ‘Zoom Out’ from Spain’s traditional DO system, focussing on macro regions and grape varieties, the Villages project is quite the opposite – a zoom in to a very specific type of climate and soil within a famous DO. In the Priorat we are working in the warmest and driest village in the region, the village of El Molar.
Roger Grifoll’s family have spent many generations going out to ‘Lo Tros’ – specifically a piece of vineyard in this backwater of humanity, but a key terroir for anyone wanting to make excellent wines. Cariñena is the key variety here, giving richness and weight without being overripe.
Lo Tros is a delicate blend of Cariñena and Garnacha, two of the traditional varieties in Priorat. In cooler areas of the region, the balance may be more weighted towards the aromatic Garnacha, but here we are in favour of the slower-ripening Cariñena. The final blend is then aged for some 9 months in oak barrels.
